Mi Adobo wasn't planned as a food truck. It started as Sunday dinners — a pressure cooker full of chicken, a mountain of garlic, and a recipe that made the whole neighborhood show up uninvited.
When friends kept asking us to feed them outside of Sundays, the idea took shape: put the recipe on wheels. No fine dining pretense. No long wait times. Just the same slow-simmered adobo, the same garlic rice, served hot from a truck to whoever happens to be walking by.
We source locally when we can, but the soy sauce, the vinegar, the — those come from the same brands our family has bought for decades. Some things you don't experiment with.
